How the receipt works
A licensed warehouse weighs the crop, tests it, grades it and stores it. It then issues a receipt saying exactly what it is holding and who owns it.
That receipt changes hands without the cocoa moving an inch. Your holding is a recorded fraction of one — and because the lot is identified, you can see the grade, the moisture, the warehouse and the inspection date rather than a ticker symbol.
When you sell, the fraction transfers. The crop stays where it is until somebody takes physical delivery of the whole lot.
